Dr. Shin-ichi Kayano is currently working as a professor in the Department of Health and Nutrition, Kio University, Japan. He graduated from the Department of Food Science and Nutrition, Osaka City University, Japan. He worked as a senior researcher of a research institute, Miki Corporation, Japan. His work in Miki Corporation was the development of new products of functional foods and a study on functional components in fruits and vegetables. He was awarded a Ph.D. in science, from Osaka City University, Japan.
His current study is on the antioxidative, antimutagenic, and estrogenic ingredients in various fruits and vegetables, and the elucidation of chemical structures and action mechanism of these compounds.
